Absolutely delicious cookies that are subtle enough for children to enjoy yet still pack a punch for the adults. For an extra tasty addition, drizzle with melted chocolate at the end. (A really easy way to do this is to put 25g of chocolate, broken into pieces, in a sealed food bag and pour over boiling water. When the chocolate has melted, dry the outside of the food bag, snip the corner and you have melted chocolate ready to pipe!)
Ingredients
- 60 g butter
- 40 g brown sugar
- 75 g self-raising flour
- 1/4 tsp ground cinnamon
- 1/4 tsp ground cardamom approx. seeds from 2 pods
- 1/2 tbsp milk
- 1/2 tsp vanilla extract
- 50 g dark chocolate chopped
- 10 g cocoa nibs

Instructions
- Preheat oven to 180°C (350°F) Gas 4.
- Cream butter and sugar until light and fluffy.
- Mix in flour, spices and milk to form dough.
- Stir in vanilla, chocolate and cocoa nibs.
- Divide dough into 12 balls. Arrange on a prepared baking tray and squash slightly to approximately 4cm diameter.
- Bake for 10-12 minutes until golden brown.
